Koch Ensamble, made by Pedro Hernandez in San Baltazar, combines wild agave Tobala, Tobasiche, Lumbre, and Cirial, aged for seven years, delivering a smooth and balanced mezcal with delicate fruity notes, light smoke, and herbal undertones.
